Abstract

Hygiene is an effort to maintain health through the maintenance and protection of cleanliness. During the initial observation with the cook at the Nur Ilahi Orphanage, there was only 1 cook in the food processing for the orphanage, the cook said that when cooking he did not use personal protective equipment, such as not wearing a mask, covering his head, and not wearing an apron. at the time of cooking. The purpose of this study is to find out how food hygiene and sanitation is at the Nur Ilahi Orphanage in Baru Siak Hulu Village, Kampar Regency in 2023. This type of research is descriptive qualitative with in-depth interview and observation methods. There were 6 informants in this study, namely 1 head of the orphanage as a key informant, 1 food processor and 1 administrator as the main informant, 3 orphanage children as supporting informants. This research was conducted in February-May 2023. The results of this study were that food handlers, processed food storage did not meet the requirements. Clean water, equipment, selection of food ingredients, storage of food ingredients have met the requirements while food processing, storage of finished food and serving of food have not fully met the requirements. Suggestions in this study Changing the Nur Ilahi Orphanage pays attention to and implements hygiene and sanitation in the food processing process.
